Default Flour Substitutes

Hi there,

I was wondering if anyone knew of a good flour subsitute. I've tried soy flour...YUCK!! I've also tried almond meal, which isn't much better, tho I did make some cinnamon biscuits with it on the weekend which tasted ok cos the cinnamon covered up the almond flavour, but its still not really very nice.

What I want is some type of flour that I can use for a basic biscuit recipe so I can then add things like choc chips or nuts etc. I know the US folks have the Atkins bake mix but I haven't seen it around and I imagine it'd be rather expensive anyway.

Oat flour, at 48 grams of carbs per cup is much lower than wheat flour. If you mix oat flour half and half with almond flour it's only 29 grams per cup, plus it would cut the almond flavor if you don't like that and lighten the oat flour, which is a bit heavy by itself.

You can buy oat flour or make it yourself in the food processor.
