Default bone marrow

I've always liked bone marrow on bread or on rice cakes as a spread....now those are out. So what do I do with bone marrow, just eat it straight up?

I just scoop it out and eat it with a little sauce. The green sauce I made is a parsley/ basil pesto with garlic and lemon, and the darker one is a red wine reduction with a bit of butter. You can also just make a bone marrow broth and drink it.

I have always just sucked it out of the bone ever since I was a little kid. Mmmm. Also I buy soup bones with marrow and make a nice beefy veg. soup. The marrow just melts into the soup.

After throat surgery when I couldn't eat solid foods and yet needed to recover, I made a very rich broth with fatty chuck roast and a leg bone cut into sections, carrots, onion and celery. When it was cooked, in the first bowl I took the marrow out of the bones and whisked it with a couple of egg yolks and then poured some hot broth into the egg mixture then poured it into the first bowl. It was so incredibly rich and delicious. Within 24 hours I felt noticeably better and really got a jump start toward recovery.

Hey, everyone. Nice to be missed.

I'm doing great. Back to "normal" (or at least as close as I ever get)

The last half of last year was just insanely busy trying to catch up to missing much of the first half. Hopefully the new year will slow down a bit and I'll have a little more time.

Good to be back, even if it's for just a little bit.

I just roast them in a 425 degree oven for 20-25 minutes. That's it!

When I tried it I roasted them at 450 for about 15 minutes and the marrow just melted and flowed out the bottom of the bones into the baking dish. When I pulled them out the bones were empty and the baking dish full of tasty liquid fat.

I've done mine twice now at 425, but these are big bones, maybe yours were small? Mine were about 4 inches long.

And yes if you roast them too long they will liquify. But that liquid is still good.

I finished making a batch of beef stock tonight. It's amazing how much flavor beef retains even after 36 hours of simmering. I pulled out the bones and they all still had nice big hunks of marrow left inside them. It was a nice late-night snack.
