Default Kipper Dippers

I came up with this yesterday while hunting for a quick bite. My pantry was quite bare and when I found the tin of kipper snacks I thought...I wonder if this would taste good. It did.

8 oz cream cheese softened
1 tin of kippers
1 tbsp capers
1/4 tsp black pepper
celery sticks for stuffing

Soften the cream cheese and drain the kippers. Mix the first 4 ingredients in a medium bowl and then use a knife to spread into celery sticks. This makes quite a lot of dip. It would be good with some chive mixed in or green onion tops....but I didnt have any. I ate 4 3 inch sticks with this dip and was full. My 10 year old daughter even liked it.

That's a good idea... plus the kippers have a nice amount of protein, so it's a pretty solid snack.

Thank you for the kind comment. I love all those canned fish products like smoked oysters and clams and kippers and sardines and also the smoked white fish that I can sometimes find in the seafood department at my Frys. I stock up on these things and I find that they make a great snack just out of the tins......My husband thinks I am nuts and always makes a face when I snack down. I thought I could get him to try kippers (which are the least threatining of the bunch) if I hid it in cream cheese. What isn't better with some cream cheese, right? For supper one night I decided to just do appetizers and served meatballs, kipper dippers, other crudite and so forth. He loved the kipper dippers (when I told him the name I changed it to smokie dippers so he would try it.) He still doesn't know. LOL
