You can do a search for "shirataki noodles" to learn more, but they are asian noodles made from a root powder (labels use the term 'yam'). They can give the impression of mung bean noodles. They are packed in water, versatile, low carb and easy to use in recipes.
When you open a package, you will smell a fishy smell, don't let that scare you off. Its the lime that's used in making the noodles. You might find them in asian groceries, large grocery stores and can order online. They are also called shirataki konnyaku, konjac or konnyaku noodles.
There are also tofu shirataki noodles which some members like better. I find them too chewy, but I still use them from time to time in chicken noodle soups.
