Default Carb Up Calabasa!

They are similar to pumpkin, only in the squash family. They are large, sweet, fleshy, rich in vitamin A vegetables, known in the latin and caribbean countries.
And this is a knockout recipe for carbing up days!!!!

Market usually sells these all ready cut and bagged. Usually a 1/3 or 1/4 of the squash.
warm 1/2 stick of butter in a measuring cup in microwave, and add a couple dashes of cinnamon powder and cumin powder. stir.

flip the melon over and gently slice off the skin, cutting facing knife down.
slice off all the skin, and then flip over and toss out the seeds and fiber. Slice the squash in large chunks following the shape of the squash, about an inch thick. put in a microwave safe dish, making sure, all the pieces lie down. pour the butter over the pieces. grind some fresh ground pepper, and sprinkle some sea salt on all the pieces, and then cover with saran wrap.
microwave for 10 minutes at 50% and 5 minutes at 85%. let sit 10 minutes.
uncover and cut slices into chunky mouthsize pieces, and dip into butter mixture before putting in mouth.... adjust seasonings. Yum.

***if you crave sweet potatoes, this is an excellent recipe.
