Question Unsweetened coconut

I want to make some SF Macaroons. The only unsweetened coconut I can find in my area is flaked, not shredded. Can I put these flakes through my food processor, and shred them into smaller pieces?

How big are the flakes? Are they around this size?

They are large, 1/4 - 1/2" wide, about 11/2" long. Looks like what you would get if you used a potato peeler on the fresh coconut.

Yep! You can grind them smaller. Just be careful not to grind them to a powder. If you have a coffee grinder, try using that instead.

Just thought of something...did you check in a natural food store for shredded coconut?

I got this coconut at the little health food store in out small town, it's Bob's Red Mill brand. I noticed yesterday that they have 6 ounce packages of unsweetened coconut in the frozeh fruit section at the Super Walmart.
