One of the great things about being a low carber is that you won't hit the wall as a lot of runners tend to do. You hit the wall when your body runs out of carbs and has to switch over to fat stores. On a low carb diet there is little or no transition, as you're vody is already burning fat and protein for energy.
As for eating before the race, I would suggest that a small meal of fat and protein should do the trick. It might also be a good idea to drink a protein shake as soon as you can after the race, as it will help with recovery.
