I do something similar when I make my version of cold sesame noodles. I don't use noodles but the taste is very close. I use thinly sliced onion and shredded cabbage as the noodles.
My sauce is made from low sodium soy, sesame oil, crushed red pepper, grated garlic, ginger, a bit of hot chili oil and some peanut butter. I heat this slowly and stir as it blends.
I make the sauce while the veggies are getting soft. When the sauce is done, I pour it over the veggies and let it all cook together.
