Default What did you have for dinner?

I love this thread on my other cooking forum that I visit. It will give other people different ideas.

baked chicken which I rubbed olive oil and then seasoned it with cookies seasoning. It was so moist and the skin was so good and crispy.

mixed spring salad with homeade vinegrette and blue cheese on top.

califlower "mashed potatoes"

My dh raved about the dinner tonight. He isn't lc, but loved the califlower.

What did you have for dinner tonight?

We were on the road, so we went to Hardee's and I had them make me the hot ham and cheese, in a tray, without the bun. They were very accommodating. It was sooo good!

I'm having people over, so it's foo-foo chi-chi tonight.

Spinach Salad with Mint and Parmesan Dressing

Seared Scallops with Saffron Butter, Roasted Cherry Tomatoes and Mushrooms, Steamed Asparagus.

Ricotta Semi-Freddo with Warm Strawberries and Balsamic vinegar.

Otherwise, I would be having a can of tuna or some eggs!

Tri-tip steak, marinated for 3 days, slow cooked... was the best I ever made.

Steamed broccoli and cauliflower, buttered, with garlic salt.

Bottle of water.

Diet Rite Peach.

Damn it was good.

2 small chicken breasts, marinaded in sante fe sauce, cubed, cooked in oil.
Added hot sauce, bit of soy sauce
2 c. total of chopped cauliflower, zucchini, red pepper and celery.
Stirfried all together.

YUUMMMYY!!

I had chicken too I rubbed herbes de provence under the skin, all over, and roasted it, breast side down. I also had saute'd radish, brussels sprouts with cream, and broccoli. All the flavors blended well.

We think similarly Julie...I'm crockpotting some corned beef and cabbage right now....Added potatoes for DH.... but I won't have them.....So good slathered in butter!......Bon apetit! KC

hmmm it was a serve of the Macktown Chilli (I got the recipe from this site) with a dollop of sour cream, some grated cheese and 1/2 avocado with a side salad of lettuce, mushroom, capsicum with blue cheese dressing ... for dessert it was half a piece of Lindt 70% dark chocolate - serving suggestion - let it melt slowley on your tongue

I had pork chops with garlic and salt pan fried with a side of roasted cauliflower (my new favorite veggie) sprinkled w/ parm. cheese. YUM!!

Next time you make the califlower try rubbing it with mayo (after steaming aldente) and sprinkle with parm. cheese and broil it until it gets golden brown. Yummy.
