This is a simple and delicious meal.
What you'll need
Shrimp ( I used the frozen bag of shirmp, that could be purchased at walmart)
1 zucchini
1 Yellow Squash
1/4 of yellow, red and green bellpepper
1 tbs parmesan cheese
1 tbs crushed red pepper
1/4 cup Lemon Juice Concentrate
1 -2 Tablespoons of Butter
I started by prepping my veggies. I washed and sliced the squash and zucchini. Then diced about three strips of the bell peppers.
I added the butter to my electric skillet, then stirred in about a cup of frozen shrimp. When they were tender I added the vegetables, then the crushed red pepper and lemon juice. When the veggies were tender I stirred in the parmesan cheese.
This meal took under 30 minutes to make. I didn't eat it right away. I actually froze it in two seperate containers. I cooked it in the microwave last night for about five minutes. I couldn't believe how tasty it was. It was just very good and satisfying.
The clean up was super easy since I cooked everything in just one skillet.
