Default Lemon Cake

OK, this is my first time posting a REAL recipe that *I* created!! I kinda took the 3 minute cake thing and tweaked it.

Here goes:

2 T melted butter
1 beaten egg
grated zest and juice from 1/2 lemon
splash vanilla extract
2 T coconut flour
1/2 t baking powder
1 t oil or mayo for moistness
dash heavy cream

Mix it all up and nuke for 1 minute, 20 seconds (on my microwave - you may want to adjust for your own oven) I made it in a 2 cup pyrex glass measuring cup. I ate this with Raspberry DaVinci whipped cream and a couple of fresh raspberries.....TO DIE FOR if you like lemon ( I LOVE the combination of lemon & raspberry!) It comes out nice and spongy!! Don't know what exact carb counts are for this, sorry!!
