I was the same way...wasn't sure about the spinach part..but so glad I tried it cuz I love it! I make a double batch so we have leftovers! Yesterday was eating it at lunch and everyone was commenting about how great it smelled.

Same here. My friend had to have a bite and she liked it.. or so she said. I love that I didn't miss the pasta at all!

Made it again last night. DH won't eat it because it has "all that weird stuff in it" aka vegetables. More for me! Added orange peppers to it too and used ricotta. Yum yum!

Definately, as the temps get cooler and cooler this will go on my menu ~ EVEN if only three out of the 5 will eat it! MMM anything hot ooey and gooey will go on my "to make" list this late Autumn and winter.

Your idea sounded wonderful. That's what I did tonight.

It was incredibly good!

DO NOT miss the pasta. I love stuff with tomato sauce. This isn't just a good low carb version; this is wonderful lasagna.

I agree!!!! So glad you enjoyed!!! I think I'm going to have to try the variation you tried also. It's always nice to be able to change it up a little sometimes!

I think I have this one aligned to my preferences; sweet Italian sausage, fresh spinach, use ricotta to replace half the cream cheese, and put a layer of black olives on right before the second meat layer.

Dang! This is wonderful.

I made this for dinner tonight and we all loved it including my teen daughters boyfriend. I think he ended up having 3 servings! He said he wants the recipe and thinks it would be an awesome dip for chips. lol

I made this again earlier this week and so yummy yet again. I do up the sauce a little which does increase the carbs just a bit but for me it hasn't been a problem. Love this recipe!
