Default Help finding a recipe please!

I remember seeing some sort of oven roasting technique for green beans that makes them crunchy. I've searched with google through the forum, looked in the indices and I can't seem to find it. Anyone know where it is?

It was in one of the Bernstein forum threads where Eddie lamented his loss of French fries and someone provided the recipe. One of the more recent threads.

I was the person who gave a roasted green bean recipe in a diabetes thread. What I wrote there is:

Roasted green beans can make a surprisingly good substitute for French fries. Take whole frozen or fresh green beans and drizzle them with extra virgin olive oil. I put the green beans in a plastic baggie, add 1-2 T of olive oil and shake to coat the green beans with oil. Put the beans on a cookie sheet, salt and season them as desired. I put the salt in the baggie, too, and shake it on. Roast in a 425 degrees F oven for about 25-30 min. Halfway through the cooking time, turn the green beans. You want the beans lightly brown and crunchy; some will even get quite dark, but don't burn them. They may look ugly, but they'll taste good.


Some people also season them with onion salt or garlic. And, it make take some test tasting to get the crunch just right. I originally learned about these from a long thread on the forum at Dr. Bernstein's Normal Sugars website, but I believe there is also a thread about them somewhere on this forum.

Oh, and this works well for asparagus spears, too.

There is a Thai dish based on deep fat fried green beans. Not fried until crisp though, just until brown spots appear. Add sauteed ground pork, lime leaves and a your basic Thai sauce based on fish sauce and yum!

I am going to try your recipe, Carolyn. Sounds great!

Thanks! I went ahead and tried it myself before I read your instructions. I think I burned them though. But they're crunchy and salty! I think I'll eat them anyway.

Fortunately I have an enormous bag of them to use up.

I'm going to stick your recipe in the snack section so I can find it next time!
