I saw you post your Dr has already your insulin dose- that is great, but i would definitely keep glucose tabs on hand, until you are OFF insulin. The oral agents don't cause lows, they just make your body receptive to the insulin you do produce, and so they reduce highs. But insulin of course can and does produce lows.
While you are adjusting to new diet, i would encourage you test your BG very frequently, particularly before driving. it is really easy to lose symptoms of hypos as the years go by, but that doesn't mean you are not impaired. It is a HUGE issue for types I's and there have been a number of police brutality cases where a type I was mistaken for a drunk driver....and those are "luckier" than the ones who end up in crashes, injuring themselves or others.
And i agree pb and nuts and jerky are great options- i think people meant the cheese and salami for a day trip
quest bars are great, too- also there is an overpriced but tasty snack sold in grocery store and even starbucks called moon cheese. it is a crunchy little snack, made just from cheese and shelf stable. they are like cheese puff snacky type of thing.

i really am glad you pulled over! i had my pump malfunction last fall, and had just pulled over when i realized something felt odd. less than 60 seconds later i started seizing, slammed my head into sidewalk and was knocked unconscious. i thank God, i was not still behind the wheel.....
ETA- just to show how insidious low symptoms can be: i had left my apartment 10-15 minutes before this seizure occured, and my fiance had kissed me goodbye and said to have a good day at work. I seemed completely normal to him....
after being given glucagon and juice, the medics first took my blood sugar at a level of 42. i must have been far lower before that.....
