I have made this now several times and absolutely love it. It is by far the best recipe I've found for chicken! I try all different cheeses, whatever's on hand and it comes out great each and every time! I've even tried it without the veggies since my daughter doesn't like them and it's still great!

This is definitely a recipe a novice can make! You can't go wrong!

Thanks for sharing this with us all.

I made this again on Sunday night and it was A+++.

diemde, I also make mine with whatever cheeses I have on hand. This time I used a jack and colby mix and I added sour cream as well. Oh, I also added some mild, smooth and creamy dijon mustard to mine.

The other thing I do is make 2. It's just as easy to go ahead and make 2 so that I can have a quick dinner to re-heat a few days after I cook it for the first time. It also gives us a hot meal that we can look forward to all day long!

I made this for a dinner party this weekend and it was a HUGE hit!

I messed with the veggie/carb counts a bit and it turned out being less than 5 per serving!!!

Donald-I made the chicken-broccoli tonight-haven't ate any yet. Smells good! The veggies weren't done in 45 min. although. I cooked it twice as long-don't know what the problem was but I hope it didn't hurt the recipe!

Mary, did you sautee the veggies first and then cover it all with foil while baking?

Sometimes the celery in mine remains a little crunchy, but the broccoli and onion and mushrooms definately are not.

This sounds really good. This sounds like a good indoor dish for days when I can't toss something on the grill.

I really like sharp cheddar cheese. I wonder if the flavor would be too strong for this recipe.

Hey Donald-yep! I suateed the celery, onion and mushrooms. That's okay-it took longer to cook but everything was done. The broccoli wasn't done either first go around. But I took some to work today and it is absolutely delicious! So good... I have enough to last a week! I added the solour cream in there too ...thanks again!

Mine was watery after I froze it and wasnt the same reheated. It was very good right out of the oven. All my veggies cooked.

I don't know what happened with yours, Milmary.
I didnt even measure , I just threw a bunch of brocolli in .

Yeah, I learned this the hard way. I figured that it would be just as easy to make two as one and that I would freeze one batch for future dinners.

We love this recipe at our house, so we were really excited to be able to pop the frozen version in the oven and have it during the week, when time is tightere and I don't have time for all the chopping and such.

Ick. It was completely awful after being frozen, so I definately don't recommend doing that. However, re-heated from the fridge it's awesome!

Resident Mayonnaise Authority here to report:

Quote:
Can Hellmann'sŪ Mayonnaise or foods prepared with mayonnaise be frozen?
Freezing mayonnaise will break down the emulsion and cause separation and other textural changes. Freezing dishes or sandwiches made with mayonnaise is not generally recommended. The results may not always be successful, depending on the type of recipe and the amount of mayonnaise used. However, baked goods prepared with mayonnaise as the shortening ingredient freeze well.

Hope this helps,

Kay
