weekend wrap up--

friday was moving day for me, so after an exhausting day, we hit the whole foods salad/hot bar- had roasted chicken, grilled eggplant, marinated mushrooms, and greens with lemon juice
champagne at home

saturday- leftover bell pepper, broccoli, cheddar quiche with side salad and lots of chopped bell pepper and some goat cheese- sf raspberry vinaigrette

sunday- mom made and brought over chicken marsala with lots of mushrooms and freshly shaven asiago- thanks Mom!!!!

Borrowing from a couple of different recipes, I created a low carb Cheddar/Bacon/Ham Chowder yesterday that is the best "chowder" I've come up with so far. I'm hoping that my family didn't gobble it all up today so I can have another cup for dinner tonight.

Orange chicken stir fry

Made with chicken, frozen bag of stir fry veggies, a head of fresh broccoli and some green beans from our garden. To make the orange flavor, I mixed up some sugar free smucker's orange marmalade, a pack of splenda, low-sodium soy sauce and a couple of tsp of orange extract. It's good!

Dinner has been the same for me all week.

I call it WannaBePizza.

1 Tbsp. Low Carb Pasta Sauce smeared on a small paper plate.
Topped with shredded Mozzarella
Topped with Pepperoni

Microwaved 1 minute.

Eat. Throw away paper plate. Throw away plastic spoon. No dishes!

Was working last night, so had scrambled eggs with cheddar and dill, and half a tomato with seasalt- the tomato was SOOO good! Love the farmer's market

When i got home i snacked on green beans with baba gnouish.

Tonight will be flounder with garlic, lemon, paprika, and parmesan.
And roasted roasted asparagus with freshly shaven romano.

Last nite I made chicken thigh chunks wrapped with bacon (and a slice of jalapeno inside) done on the bbq. Served with an avocado 'ranch' dipping sauce and cut veggies.

Tonite, I'm making a stir fry thingy I do quite often, based on cabbage rolls. I saute some ground beef and hunks of gf italian sausage with some onion in a big pot, add a bunch of sliced cabbage, riced cauliflower and some stewed tomatoes (whole tomatoes only, not too much broth or you will make soup as the cabbage lets out a lot of water lol), some spices and hot sauce, then cooking until the cabbage and meat is done, and liquid has cooked off, about 10-15 minutes or so. At the end, top it with lots of salt and pepper and grassfed butter (i used to use sour cream too but limiting dairy lately). MMMMM soo good.

shirataki noodles- melted garlic herb laughing cow and garlic powder
the leftover asparagus
topped with freshly shaved romano

I made this tonight. It was very good. It got 4 thumbs up from my family. I did top it with sour cream and grated parmesan. Thanks for posting it.

Two hatch green chiles stuffed with taco beef and broiled with jack cheese on top. For a side, we had sliced tomatoes with mozzarella and sea salt. The chiles were roasted earlier in the day and I had taco meat from the other day so this took about 15 minutes. Hatch chiles are in season right one and they are AMAZING!

You are welcome! It's one of my kids' faves too. They don't like cabbage as a rule, but they will eat it like this They gobbled it up last nite too!
