I suspect most Americans are already malnourished, when you consider how much of their diet is composed of non-food foods and junk. I mean, we have a whole group who are on constant diets, restricting their food intake and thus restricting possible food nutrition, plus compulsively eating diet foods, diet yogurt, diet bars, diet frozen dinners, and the like. We have another whole group that doesn't supplement. We have another whole group who Dont even bother thinking about it and just eat whatever.
We have this idea that whatever is lowfat is healthy, period, and don't take other nutrients into account.
The way I see it, if you don't eat vegetables, but everything else you eat is still real, actual food, you're ahead of the curve. That accounts for a lot of us right there.
