Default spinach casserole

Just made this this morning - yummy! The cheese at the bottom makes a nice crust.

1 pkg (16 oz) frozen spinach, thawed and squeezed dry
4 eggs
1 cup heavy cream
1/2 c butter, melted
1/2 t salt
1/4 t pepper
parmesan cheese

Throw all but cheese in the blender and blend till smooth. Spray large pie pan then dust with parmesan. Pour rest on top and bake for 45-50 minutes 350 degrees.

I printed it out. That does sound yummy. Do you use fresh parmesan or the canned stuff? About how much? Just "dust" or more like "crust" thickness?

The canned stuff worked fine. I made a dusting but you could make it thicker if you'd like.

Ooo, that does sound good--I love spinach.

Sort of seems like it might be similar to the Stouffer's Spinach Soufflé, one of my all-time faves.

I was thinking you could probably throw some cheese on top too - for some added crunch. Yum!
