I've made pancakes out of almost anything. Really, all you need are eggs, baking powder and something else. For the something else I've used ground zucchini, flax, almond meal, rice bran, protein powder, pumpkin, and probably other things I'm not remembering.

Sure, they don't taste like the old sort but they're really a vehicle for butter and hot, sweetened berries anyway.
