Default Hello Vege low carbers

Just joined today. I'm looking forward to having a read of all the posts on here.
I have started a journal too, to keep myself accountable!

I'm following the Rose Elliot book for my diet. It was very difficult for the first few days but I'm finding it easier now.

I'll weigh myself on Thursday. Fingers crossed!

Hi Judas and welcome to low-carbing.

I am not a vegetarian, but some of my best friends are. I often find myself having to prep veggie low-carb dishes. How do you find the Rose Elliot book? I was going to take a look at it, but I am put off by some of her earlier books that had such a lot of soy products in them. We can't eat soy, so it would not be worth my while buying a book that had most of the recipes using ingredients I can't use.

Welcome to the forum This is an amazing place for information and inspiration. I am new myself. I started LC on March 17 for health reasons and the weight loss has been a great bonus.

Heh - welcome fellow veggie! I too am following Rose Elliot's book, I have her recipe book too.

Are you SICK OF EGGS yet? Hehehe.... luckily I love my cheese, but the eggs have been known to get me down sometimes!!

Hi guys,

Yeah there are great ideas on here.

I am definitely getting sick of eggs now alright!
I was brought up under the doctrine of "3 eggs a week is enough", and now I'm eating LOTS!!! My mother would faint if she knew!!

It works though, so I'm delighted!

Yes, I'm back to doing LC way of eatting, BUT now that I'm been eatting vegetarian LC starting strong starting Monday. I also will be following the way I can with Rose Elliott's book. I will change some things, but I'm so excited to find LC Vegetarian way of eatting.
I lost 75 pounds about 1 1/2 yrs. ago on LC. And I have gained gained back 65 lbs. in 10 months. Working a high stress job and coming home at 3:30 a.m. and beinging on ice cream. But, I rejoined Tops and rejoined my gym and I'm ready to do it.....
AND I'M SO GLAD THERE IS A VEGGIR LC IN THIS FORUM.....

That's great Judy.

I use Rose's book everyday and find it excellent.

I don't follow rigidly her suggested daily recipes for the "carb cleanse" phase. Instead I stick 100% to her advice of under 20grams of carbs and between 60-80grams of protein a day. I do use some of her recipes which are fabulous...especially the tofu hummus, that is the best I have ever tasted and keeps me full for hours.

I weigh everything and use both Rose's carb counter at the back of the book, and an online counter for other foods. I keep a daily diary of everything I eat so that I can see how many grams I have left to eat for the day. It keeps me on track.

No problem at all. This stuff is beautiful.

Tofu Hummus
Serves 2

40g sesame seeds
Half teasp salt
250grams of firm tofu, drained
1 clove of garlic, peeled and crushed
2 tablesp lemon juice
2 tablesp water
1 tablesp olive oil (optional)

Toast the sesame seeds by putting them into a small pan with the salt and stir over heat until they turn light brown and begin to jump around.

Remove from the heat and powder in a coffee grinder (I used a pestle and mortar or you can just whizz them in the food processor)

Break the tofu into chunks and put into a food processor with the sesame seeds and garlic. Whizz to a think cream and then add the lemon juice and the water as necessary until you get a lovely creamy consistency.

Finally whizz in the olive oil.

2 servings
3grams carbs and 23grams of protein per serving


If you try it do let me know what you think, I'll be curious. I eat half of it with some fried up mushrooms and bean sprouts. MMMMMm
