So I just made these and they are in the freezer. I added HWC and realize next time to heat it up. Intant hardening. Does this make a very small amount? Is everyone constantly making this since the amount is small?

I make a small batch every 2 days to pace myself. I just want to say the taste of the oil makes such a big difference.

I frequently add shredded unsweetened coconut, about a tablespoon of butter for one batch and flax meal to my coconut bark.

I am also thinking of using candy molds, fill them less than half way, then a drop of natural peanut butter, freeze again then more of the warm bark mix then freeze. Trying for a peanut butter filled chocolate that would be super round the holidays!

Has anyone else had the problem of the coconut oil separating from the HWC? When I took mine out of the freezer there was a layer of cocobut oil on top. They still tasted pretty good though. I made a plain batch with just CO, cocoa and splenda and the splenda all sank to the bottom! I don't have any no carb sweetner and I need to use up the splenda packets I have first. Anyone have any tips or suggestions?

Bumping this back up. Made this for the first time today, and they set like, INSTANTLY! I used my stash of baby food containers as molds. This is awesome! The DH had insisted on getting a dozen krispy kremes since we were down by the shop, and...even though Im not a fan of donuts, much less the sugar-coated diabetes bombs KK makes, the heart covered box has been staring at me all day. This recipe will keep me on the straight and narrow.

But question about baking chocolate vs cocoa pwdr. This site (an absolutle plethora of chocolate info) told me the following:

http://www.baking911.com/pantry/chocolate_types.htm

'
You can use cocoa powder in place of baking chocolate by melting one tablespoon unsalted butter or vegetable oil with three tablespoons of cocoa for each ounce of baking chocolate required. '

so, using baking chocolate, how much would I use per T of cocoa? The recipe came out ok, but I would like to optomize if possible.

Anothr site said 6Tcocoa plus 2T oil = 2 Sq bakingchocolate.

that means 2+1 = 1 sq. doesnt seem like enough.

LCTrekker, I often get that thin white dry sheen on top like some separation. Dunno what to do about it.

I think I might make a variant dessert based on this tomorrow, lots of mods, will post if so.

adding orange extract would be good....I'm going to try.

Also, how about putting a tiny glob of peanut butter in the middle before hardening? Kind of like a peanut butter cup.

I was cleaning out my old baking cupboard this weekend and found a Jello jelly bean mould for making those jello jiggler jelly beans......it was a freeby with proof of purchase coupons a few years back. I used it to make the bark and it works great. I have a tupperware container in my freezer with little chocolate beans in it. I never did like it for those jiggler beans.......I am not sure why I even kept the thing.......glad I did.

Ok, I made some of these day, 4T of coconut oil, 2T of butter, 1/2 cup smashed pecans, splash of vanilla extract, 1/4C splenda. DELISH! I think this will be my preferred method of coconut oil ingestion.

I just made some, toasted organic coconut flakes and mixed it in, added walnuts, several tablespoons ground flax seeds, a rounded tablespoon of peanut butter, and a quarter of a pack of cream cheese. Tastes like brownies, this may burn out to be something I have to limit myself with!
