After reading all the posts on this site extolling the virtues of coconut oil I finally decided to buy some. I really thought I'd find it disgusting, but OMG I was totally WRONG! It is the most delicious, delectable, divine food I've EVER eaten. It melts so deliciously in the mouth, it smells incredible. I'm so glad i bought it!

I made this coconut bark and I love it! It's just like eating an Almond Joy. I put some in my coffee this morning too and that was delicious.

I only saw coconut oil in the grocery store, where would I find coconut cream?

Bk Metro: Try Asian grocers. The only place I have found coconut cream has been at an Indian specialty store.

Your welcome ... and I just have to share ... last night I made the best. bark. ever. No seriously, I used the basic recipe: CO, cocoa powder, and stevia. Then I added coconut flakes and roasted macadamia nuts. It was like a surprise deliciousness party in my mouth .

Thanks for the recipe. These are tasty! I think now that I tried the basic recipe, I will add some unsweetened coconut and chopped nuts to the mix. It worked out really well to mix in a glass measuring cup and than pour a thin layer into a nonstick mini muffin pan. I left them in the freezer for about 10 minutes and then popped them out of a pan and stored them in the frig. They make cute little disks. I eat two as a quick snack.

Does anyone have or know how to figure the quantities needed for a larger batch, say 1 C of co? I would rather make 1 large batch and be done for awhile.

One cup is 16 tablespoons, so multiply all of the other amounts by 4. For example, if you use the recipe at the beginning of this thread, with 1 cup of coconut oil you would need 4 tablespoons (1/4 cup) of unsweetened cocoa powder. If you use 1 1/2 tablespoons of cocoa for a small batch, you would need 6 tablespoons of cocoa (3/8 cup). You'll have to work out the amount and kind of sweetener to use--the power of various sweeteners and personal taste vary so much.

I just used a candy mold, oh how easy that turned out. I found a mold for making candy bars, each bar is 2 oz., and is scored for 4 portions.

I love this coconut bark. I didn't realize I was doing something so healthy for myself. I just like a sweet treat at the end of the day. Now I just have to get my non LC family to keep their hands OFF!!!

I've made this many times but never heated the cream. It helps it mix. Also, adding coconut and mac nuts makes it wonderful. Thanks

OK just pulled my first batch out of the freezer, I can only have a small taste right now but it's really good. Melts on my fingers too quickly, but since I can only have a broken part, I will just eat them out of the freezer.

I made mine in some small plastic dishes left over from yogurt. I sprinkled in some shredded coconut, and dripped a little Oil on that and put them in the freezer. Then I mixed butter, a little cream, splenda and the cocoa powder over a low heat, then melted in the CO.

By then the first layer was cold and I poured in two tsps of the cocoa mix and sprinkled some almond shreds on that. It made 8 coin like candies, which I broke into quarters when it was cold.

My son even liked it, but my wife wouldn't try it.

I just put my first batch ever in the fridge. Doubled the original recipe from about the third post. At the same time I was doing this, I was putting eggs on to boil and eyed up the empty styrofoam egg carton--so, guess what my candies are in, sitting in the freezer. I'm hoping I can just pop them out of their little 'cups'. I'll let you know how it works.

worked fine, they just pop right out of the egg cups. now if i can just stay out of them!
