That second one has a tiny bit of sugar as the last ingredient, but I'm sure it's a lot less than the commercial sausage that contains HFCS.

Here's a sweet treat that I put together one morning with left over pumpkin and it was so good I had it for breakfast every day for a week.

1/2 cup pumpkin puree
2T coconut oil
2T almond butter
1/4 tsp maple extract
3 drops sweetzfree or equivalent
1/2 tsp pumpkin pie spice and/or cinnamon
sprinkle of salt

microwave long enough to melt the coconut oil and warm the pumpkin. Stir and eat. 8 carbs.

So rich and satisfying it held me for hours in the morning even with the low protein count.

I had to post after making the Pumpkin Sausage Soup in this thread. Wow, this was GREAT!!!!! I used a little more sausage than called for, and instead of using Italian Seasoning (YUKKK) I used some of Wegmans Herbs de Provence (sp.). Absolutely delicious!!!! Thank you to the person who posted this one!!

I made a mock pumpkin cheese cake, well put it into individual cups and it made about 6 servings. It was pretty tasty. Not too sweet. Now I have some leftover pumpkin. The only thing is that, mine says it basically has 4 grams of carbs (after taking out the fiber) and 5 grams of sugar per 1/2 cup. Is that right? there is nothing added to the can, it is pure pumpkin.

Can't have 4g of carbs (less fiber) and 5g of sugar.... the Total Carbs includes sugars (natural OR added) AND fiber, the numbers have to add up. Or the label is wrong.

Check the carb counter (see under TOOLS on the big green menu bar above) and see if your pumpkin label checks out against that...

I also have to give a thumbs up to this recipe!! AWESOME!!

I saw it in Leslie's journal, thanks Leslie.

I even curled my nose at it, at first, but thought, what the hey, give it a try!1

DH and myself really liked it!!

My only change was to use 1T. oregano, 1t. marjoram and 1t. basil. I didn't have Italian seasoning in my cupboard. Oh, and I was out of mushrooms, but will put them in the next time.

I love this thread, thanks again!!
