Default Blueberry Cobbler

I was thinking about how I don't like the low-sugar fruits without added sugar, but I'd really like to eat a little more fruit...so I came up with this.

I was completely astounded how yummy this was! It's a keeper for me, for sure. No weird ingredients. It could also serve as a "hot cereal" of sorts, I thought.

2 ounces fresh blueberries
1 tsp heavy cream or water
1 ounce ground almonds
1/2 tsp butter
1 packet of Splenda

Place the blueberries in a small ramekin with the cream or water and a sprinkle of splenda from the packet. Cover with plastic and nuke for 30 seconds, stir and set aside.

Meanwhile, place the butter in a low-medium hot small skillet and add the ground almonds. Cook and stir until golden brown. Remove from heat and stir in the rest of the splenda.

Uncover the berries, and sprinkle the topping over, and serve when cool enough to eat. A dollop of whipped cream would be good, too.

It makes 1 serving, and according to my plan has 230 calories, 18g fat, 14g carbs, 4g fiber, for a net carb of 10g.

This is just too wicked.
I will have to try it; I might even try it with rhubarb from my garden. I cannot go wrong with ¼ cup of fruits.

I don't have a scale, how much is 2 ounces of blueberries? (in cups)

I just made this with 1.5 oz of blueberries (5 net carbs because of OWL). I topped it with whipped cream and drizzled Walden Farm's blueberry syrup over it.

Yum! It was almost too good. Next time I might toast some shredded coconut with the almonds.
