Not being able to sleep is very common at the start of induction, it will go away and you will sleep better. Meijers (kroger foods) carries coconut oil. Is there a flour that is accepted on the induction <20 carbs

Witchiejen, I love HEB. I wish we had them over here.

I'm going to my local HFS tomorrow to buy come coconut oil to see what the fuss is all about!

I get mine at GNC in the 'tub' for coffee, slin, etc., but I also bought the gel caps and take 4 of those in the afternoon. Aparently people here in Minneapolis are getting a hint of the greatness of CO because the GNC's can hardly keep them on hand! Great, if everyone loves it the government will surely put a ban on it so they can spend a zillion dollars to make sure it's safe.

I bought LouAna at Wal-Mart--in the baking section. The only caveat purists might note is that this particular oil may not be "expeller pressed" in the manner endorsed by elite processors. But like the arguments over "organic," and so forth, this one may be based on marketing persuasions, not nutritional ones.

I get mine from the Tropical Traditions website. Virgin Coconut Oil has a mild coconut flavor, and the expeller pressed has no flavor. I keep and use both, depending on whether I want to taste the coconut or not. Both are very good for you.

Am I the only one who eats it straight out of the jar? It tastes like candy to me. I haven't even tried to cook with it yet.

Question

Can someone give me a run down on how you are supposed to use it? Are you just replacing dairy in coffee with coconut milk and oil in dressings/cooking with coconut oil? Or is it something more, do you take it like a supplement?

I make stirfries with coconut milk to get that Thai flavour, but this is news to me. Off to the websites...

I can eat it from the jar. But I've been melting two tablespoons with one square of 85% chocolate, dividing in six and then freezing them. Cures my need for a chocolate fix!

I haven't bought my co for a few years and it was a quart jar. Now I am thinking that I may like to try that candy, but I only have about a cup or so left. I went out to buy some today and at GNC, it was $12 for 16 oz. If I were to make that candy, it would cost me over $6 for 12 1oz pieces. That would include the cost of the chocolate and the Splenda.

How much are you spending on your coconut oil? I know that GNC is always high priced, but I can't afford that.

I get my oil at the local grocery for under 3 bucks for 16 ounces.
