Here's the recipe for the meatloaf from lowcarbluxury.com.
http://www.lowcarbluxury.com/recipe...pe-combo02.html

I will say that I haven't made it before so I don't know how good it is, but it looks like it will be.

As for the mushrooms, I just saute with olive oil, butter and garlic. Delish!

Pan fried chicken leg quarters (seasoned with salt, pepper, garlic, tarragon and a pinch of thyme), cucumbers with mayonnaise sauce, garden salad with ranch dressing.
Last night was marinated steaks on the grill and Jalapeno poppers (grilled corn on the cob for my DDs)

Tomorrow night might be Dreamfield's Lasagne if I can bring myself to turn on the oven while the central air is running. Otherwise, I'll do a stovetop hamburger helper style version with Dreamfield's Penne pasta instead and serve with a side of summer squash sauteed in olive oil and garlic.

Cool... I'm subscribing to this thread. I'm JUST starting to learn to cook. I know this is kinda a laughable goal, but I'm going to learn how to make 12 things this year that I hadn't made before. Since I started with about 3 things... my repertoire of recipes will be 5 times as great as it was before.. WOOHOO.

Made marinated chicken last night, cauliflower w/cheese, and a salad, then a quickie smoothie after lifting weights. (those were numbers 3, & 4). Numbers 1 and two were chicken alfredo w/brocolli and LC tortilla noodles, and caesar salad (making the caesar salad dressing).

Fajitas tonight. Just had to grill those, they were pre-seasoned from HEB. I ate them as a salad with guacamole lettuce and cheese.

Thursday I'm thinking about a stuffed green pepper thingy from the forum, but haven't decided for sure... that will be number 5 and I'll ony be 2 months behind!

Have a delicious dinner everyone!

Mike

Mike - What does "pre-seasoned from HEB" mean??? Sounds good, BTW, and lucky is your DW that you're cooking!!!

Dinner tonight will be turkey burgers and grilled asparagus.

HEB is a grocery store (I guess maybe they're only in Texas), but you buy a package of beef already seasoned. You'd think that maybe the meat wouldn't be as fresh.. but it seems to be... they must season and package it in the store because it's not in the freezer section.

Still haven't decided what's for dinner tonight... may wimp out and just do LC pizza's.

Have a delicious dinner everyone!

Mike
