Shirataki is made from the Konjac root, also known as "Devils Tongue Yam". Konjac is the source for Glycomannan, a water soluable dietary fiber. My understanding is that this fiber expands when consumed so you will feel full with less food. When processed as plain shirataki, it has almost no calories, and is practacally 0 net carbs. If tofu is added in the processing, the shirataki will have the amount of carbs attributable to the added tofu. It is acceptable for induction.

I paid 1.99 for a small pack. They say the serving size is for 2 that's why the Asian people are so thin. hahahahh
People on this site say they buy it much cheaper.

There is a small Asian grocery where I buy it for $.99 a package. I have found in in a large Asian supermarket here for $1.39 to $1.49 per package as well.

I just caught up with this discussion- these things sound pretty interesting!

I don't think I can get them around here, so if I need to get them from an internet source, I'd like to order enough to make it worth the shipping fee. But, how perishable are they? I'm assuming I can't freeze them, right?

there are probably other names than shirataki or konjac noodles? I haven't seen either of those in all of the Asian stores I have at hand. Hm. I have seen 'yam' noodles which looked rather greenish. What do shirataki noodles look like?

They mention different names for the noodles, including elephant yam. I'm not sure, but I think I also read somewhere that they can have a greenish color if they are mixed with something, but I don't remember for sure. Maybe posting a question about them in the low carb products sub forum might turn up something?

It did say something about if they were packed with seaweed they would be greenish?? Just take a look at the carb count and that should help when it comes to deciding if you want to try them. Oh, it also said it was a.k.a. some kind of yam so that just might be them!
