This was excellent I cheated and used bacon bits to save time and the mess of frying up bacon.

It made 6 good size portions for me to freeze or eat as leftovers throughout the week with a salad.

I have it in the oven now, and I mixed in a small can of Lindsey's chopped black olives, 4.25 oz, and the total carb count on the can was 8 grams of carbs.

I made this last night, but added a splash of heavy cream to the egg/cheese mixture. Also added 1 small sauteed onion and 1/3 cup mushrooms. I did not use 2 types of cheese, just a 8oz bag of shredded colby jack.

This is good and I just finished the leftovers for lunch.

DW wondered how it would be if we replaced some ofthe hamburger with pork sausage. I'll bet that would be good with some Italian spices and mozz cheese.

Thanks for the recipe!!!

Wife made it last night for me, as I lazily sat on my shrinking butt watching the superbowl. It was a great change of pace. I liked the chilli powder, kinda gave it a mexican flair. Great recipe thanks for the info.

this is much better as a leftover -- next time I will try adding more spices, more pizazz cuz as is was quite bland, but I'll definitely try it again! Thanks!

This is really good! My DF (who is also LC) liked it...and I was even willing to eat leftovers for breakfast for a couple days...and that's saying something, since I still have a hard time eating breakfast....

I recommend it highly.

Is there an updated version of this? Original was over five years ago and people suggest many things here and there.

I had a scoop of this tonight ontop of lettuce and a little bit of home-made ranch dressing. Hubby had the casserole in between biscuits! Simple but good!

My wife and I adore this stuff! Yummo!
