I like to use soynut butter. The "I.M. Healthy" brand has only 1 net carb per serving (2 tablespoons), and IMO it tastes much better than almond butter. Great recipe regardless of what you use!

I always used ground flaxseed (or flaxseed "meal"), from the original recipe. I never assumed it would be whole flax seed. If you use whole flaxseed, it doesn't blend well and it simply doesn't digest! Just kind of shoots through

This looks great. Thanks. I am looking for how to make my own low carb bar as a snack... so if anyone has thoughts, please share.

Also, this is for one cookie--500 cal?

Yes, it seems so - you could form the "dough" into several smaller bars/cookies, or cut the one large one into several pieces before refrigerating if you don't want that many calories all at once, but if I recall correctly from your other posts you are eating at a very low total at present, so it might be a good way of boosting your intake without feeling too full!!

Just curious if I could use another oil besides coc oil? I seem to get bad headaches when I use it? Any other thoughts? Thank you in advance

This is true and thanks for reminding me. I just dont know if the coc oil will be ok, I always get headaches from it. Hmm.. I am trying to figure out another way to make a low carb bar.

You need a fat/oil that turns solid when refrigerated (ideally at room temp too or the "bar" will melt if you are taking it out with you to eat later)

I don't know any other oils which will do this, so think you will have to stick with the coconut oil unless you want to use animal fat like lard instead (I know you are having problems with butter or I would suggest that)

Never missing an opportunity to add cocoa powder to anything, I added a tsp. of cocoa powder and used a few drop of stevia extract rather than Splenda, which somewhat evens out the carb count changes.

Many of the Paleo recipe websites have homemade low-carb bars. FastPaleo has an Almond Butter Bar, homemade LaraBars recipes abound, maybe start at Pinterest and search for Paleo Bars to see what type of recipes interest you.
