Thanks for your input, it confirms what I've heard. I wonder what kind of soy flour George Stella was using in creating it??/
Another idea besides using almond flour would be to use soy milk powder. This uses a partially roasted bean (roasting is good,here), and the flavor is very mild. Can be found in health food stores.
If your in the US, theres a online place that I think is called Hodgson Mills that sells very mild tasting soy flour that is almost white in color. Let me know if you interested and I'll dig up the web site.
