I think they have a version in canada called canadian cheese (although we should be blaming each other not admiting to the stuff)

Now, I was in Canada (B.C. and Alberta) this last summer, and I was able to buy American cheese at Safeway. It's not like cheddar or swiss - it's not an aged cheese. It's smooth; the slices measure about 4 inches by 4 inches (sorry - don't know metric equivalent) and it often comes in pre-wrapped slices, with anywhere from 8 to 24 slices to a package. It's similar to Velveeta cheese, except I wouldn't use Velveeta in this recipe because it's WAY too salty. I've sometimes seen it described as "processed cheese food."

Does this help? Try asking in the service deli in your grocery - maybe it's labelled/called something different in the provinces.

Sue - No. It just tastes like peanutbutter - and sweet.

I was surprised when I made both this and the chocolate versions - did not taste the cheese at all.

Dr. A had a recipe for peanut butter fudge in his 1972 book that used cream cheese, I think, and chocolate pudding. It was delicious!

This one is similar I think:

Peanut Butter Chocolate Fudge


8 oz cream cheese
6 pkt splendaŽ, or other sweetener - or; a mix
1 oz. unsweetened baker's chocolate
1/4 cup heavy cream
1 tsp. peanut butter

Melt the cream cheese and peanut butter in microwave for approx 2 minutes (stopping and stirring at 1 minute intervals.) Melt chocolate in separate bowl until creamy. Combine chocolate with cream cheese mixture and whisk in sweetener and cream. Pour into buttered (or PAM'ed) glass pan and chill at least 4 hours. Cut in squares and enjoy. (This recipe yields a more 'gooey' fudge than traditional fudge, but if you want more uniform squares, place pan in freezer for 30 minutes before cutting.)

Isn't the point of Atkins to avoid processed and refined foods?

Uh, yeah you absolutely have a point. American "processed" Cheese is oily, waxy and disgusting. It gives natural cheeses a bad. I really think it should be illegal to call that crap cheese. Now Olde English American, is actually cheese, nothing processed about it .

I do agree that alot of american cheese is waxy & gross. I do however like Kraft deli deluxe american cheese. I know it's processed but I like the outcome of cheese crackers made with it (nice & puffy) and I like to make cheese dip with it. I made this recipe and really liked it. I actually made chocolate peanut butter fudge by adding some cocoa powder. I'm amazed at how the texture is almost exactly like real fudge. I cut the recipe in 1/2 just to try it out. I found that it was alittle too much butter and I had a hard time mixing it back in while it was cooling. I know that this problem was mentioned in the past so next time I will cut down on the butter. This will be a holiday staple for me.

Thought I'd give this recipe a well-deserved bump. I made this again tonight and I am as surprised as I was the first time I made this. It is delish!

With the holiday's upon us, it's good to know there are LC alternatives to almost all our favorites.....

Yeah, I'm going to have to make this again soon. Sigh...I ate way too much of this at Christmas time last year...didn't lose for about 6 weeks there.

I think the point of Atkins is to lose weight, keep it off for life, and find a way of eating we can live with, I have read several of the atkins books, and he even recomends some processed foods, and as i work ten hour days, I admit I use some. I also do enjoy finding LC substitutes for sweets as i have to watch my blood sugar.
