Still no response to my email; I'll see if I can call them from here (US 800 numbers don't always work from Canada, depends if they have customers here or not, or want them ) -- tomorrow morning.

BTW, for everybody out there, the reason I'm so fussed about the differences, is that the almost 70% difference in fat content (and relative fiber content, and fineness of grind for that matter) is likely to make a VERY big difference in how the stuff reacts in recipes...

So far it looks like 3 different kinds of 'coconut flour', so-called, are being sold out there, without any differentiation and with bad labelling. Irks my business and culinary soul!

I know this much Jude, with this coconut flour you have to be very careful the dough does not sit too long or it dries out and looses its ability to hold together. Ive had 2 flops so far because of that......and in both cases I could not recoupe.

3 crackers are about 90 calories and 1 carb.

Yahoo! I just got my coconut flour from Simply Coconut and it smells amazing. I ripped right into it and made their coconut muffins. The recipe was pretty poor though. It had 3 eggs and only 1/2 Cup of coconut flour!!!! It came out very greasy and eggy.

I was ravenous when I got home, took one smell of the coconut flour and I was whipping up a batch of them instantly!

Did you get Dr. Fife's Book?
If not, you should.....it's inexpensive and has some good recipes.

Hi Kevin,

I may have missed it but what site did you order the Coconut Flour from?

I looked at the Simply Coconut site but I know you said you also ordered Raw Unsweetened Coconut Flakes and I didn't see them there - I was wondering if you ordered from a different site.

ALSO....Simply Coconut sells NON-Stick Cooking oil with Coconut oil. It sounds interesting and wanted to know if you tried it?

Nikki

Its worth it? Ok, maybe I will. I might have to give the coconut flour a miss for awhile. I'm starting the SCD diet to heal my intestines and coconut might be a little rough for awhile.

Hi Nancy,

I don't mean to butt in here but I wanted to suggest to you for intestinal healing -look into SLIPPERY ELM BARK POWDER.

I had to take medication (for years) before eating so not to irratated my intestines and now I'm OFF the medication.

I use it as a tea and it has done wonders for healing.

Be Well,
Nikki
