Hmmmmph, the USDA database has
Coconut Meat, Dessicated, Unsweetened at a whopping
81.84% of the calories from fats, which is why it's such a great source for oil, eh?
But that's certainly a
long long way from
14%, and Coconut "Flour" is a processed
product,
not a raw unaltered ingredient, so SOMETHING should have been done to it ...
Still no response to my email; I'll see if I can call them from here (US 800 numbers don't always work from Canada, depends if they have customers here or not, or want them

BTW, for everybody out there, the reason I'm so fussed about the differences, is that the
almost 70% difference in fat content (and relative fiber content, and fineness of grind for that matter) is likely to make a VERY big difference in how the stuff reacts in recipes...
So far it looks like 3
different kinds of 'coconut flour', so-called, are being sold out there, without any differentiation and with bad labelling. Irks my business
and culinary soul!
