This might be a wee bit off of the original recipe in this thread, but I found a sort of substitute for pasta that I like. I make a meaty, cheesy, chunky vegetable sauce, and arrange it over (get this) a couple of cans of (stupid low carb) wax beans! Parm cheese and any other lasagna style ingredients baked with a top of mozzarella in the oven 'til bubbly and browned a bit on top. The colour and shape of the wax beans fools the eye into thinking that it's pasta. And since they have no really strong flavour, they just blend into your pretend pasta casserole. Low carb dream! It works for me!
Edited to add: My eating plans will not allow starches at all in a meal with fats or proteins, so I had to pick an inert vegetable!
