Bought some Blue Bunny lite yogurt. Sweetened with splenda, low fat. Now I can have flavor at last!

Hey guys - I've been MIA for a few days. My sons went to camp this week and I ended up on the phone all night Wednesday with the camp director/emergency room. They were whitewater rafting and one of my sons fell out of the raft and hurt his knee - he's on crutches with a knee immobilizer and took 9 stitches - fun night. Anyway, I wandered around lost with no sleep yesterday.

I can't even remember what my menu was!

Iowagirl, I love the Blue Bunny yogurt. That was a HUGE find for me!

My boys get back today at lunch. Hopefully, I'll report back this weekend when things settle down. I'm still trying to figure out how my son is going to get upstairs to his room with that knee thing on!

ratatouille (first time I've made it - very good!)

Ok the pita thing was not on the meal plan but it is Bix weekend! The Bix is a big jazz festival here, lots of street vendors. My coworkers and I wondered around downtown for lunch and that is what I ate. Very good!

I've also been checking into the whole GI/GL thing. Going to try to keep the GL in mind, also.

Iowagirl, my son is doing much better now, thanks! He came out of the knee immobilizer yesterday so he doesn't have to walk like Frankenstein anymore!

I'm up about a pound from last week - back on track today. Too much eating out last week.

This morning - 2 Egglands Best eggs poached and served over a split whole wheat English muffin - yum!

Snack - yogurt, if I want a snack - we got up kind of late!

Lunch - Either a salad or black bean soup (or some of both).

Dinner - no clue yet.

Smile Hi Girls!

Hello,

I hope you don't mind me jumping in. I'm starting the Low GI diet today.

I have read the books by Rick Gallop and the Low GI diet revolution. They are pretty similar, just that the book by Rick is much easier to understand. This seems like a very livable way of eating. I'm hoping to learn more as I go along. I need to do something.

I lost almost 30 lbs on Atkins, but got very sick of the bad breath and not being able to eat fruit or any bread. I started cheating a lot and after about 8 months, I've now gained 10 lbs back. I need to stop eating sweets. I think this is my biggest downfall.

So far so good today. But, it's only 10 in the morning here. This is what I had for breakfast:

3/4c Bran Cereal
3/4c skim milk
decaf coffee
1/2 zone bar

Not sure about lunch or dinner. I will report back tomorrow.

Welcome!

I didn't post Saturday's menu. Went out to eat and for drinks and, well you get the picture. Yesterday was....

10 bing cherries
omelette with bacon and cheese

yogurt

stir fried chicken breast
ratatouille
lettuce salad with vinaigrette

spaghetti squash
more ratatouille!

Going to make some pinto beans with ham, as I am off from work early and have time to get them going.

One thing that is weird. I have been sprinkling wheat germ on my yogurt. As of yesterday I have been itching like crazy. No rash, no dry skin. There is no skin irritation at all. In fact, the itch feels like it is coming from the inside, if that makes any sense. I'm wondering if it isn't an allergic reaction to the wheat germ. I haven't changed detergents or soaps or anything.

Iowagirl, how do you make ratatouille? Inquiring minds want to know!

You may be having an allergic reaction to the wheat germ. I guess you need to leave it off for a few days and see if the itching goes away. The pinto beans and ham sound good - I'm going to have to play around more with the dried beans. My pinto beans were great last week!

Well of course I couldn't find the exact recipe I found the first time but this sounds pretty close. One of my coworkers brought in a huge zuchini so there was plenty of that in my version. Also, my directions said to split open the eggplant, salt the halves and let it sit for about half an hour. Rinse then cube. This is supposed to decrease the bitterness.
RATATOUILLE
Article on Provence

Ratatouille is a Provencal vegetable stew that is popular all along the Mediterranean coast. It is a summer dish, best when the vegetables are in season and at their peak.

1 red and 1 green bell pepper, roasted, skins and seeds removed.
4 tomatoes, blanched, skins and seeds removed.
1 medium eggplant, cut into large dice
3 small zucchini, cut into half inch slices
1 large onion, roughly chopped
5 cloves garlic, chopped
Salt and pepper to taste
Olive oil as needed
Assorted herbs, chopped, to taste

Slice the peppers into half-inch strips and roughly chop the tomatoes. In a large Dutch oven sauté the onions, peppers, zucchini, and eggplant separately, in olive oil until each vegetable browns. If you do them all at once the pan will be overcrowded and they will not sauté, they will steam and not brown. After all the vegetables are browed, combine them in the Dutch oven, add the tomatoes and garlic, a squirt or two of olive oil, salt and pepper. Cover and cook over low to medium heat for 30 minutes or until very tender. Add the herbs at the end and check for additional salt and pepper. You can use any combination of herbes de Provence but basil, thyme, oregano, and marjoram are common selections.

That sounds wonderful! I'm always trying to figure out how to get vegetables in - I get so sick of salads, and my personal preference for vegetables is a gooey casserole! I have some really nice tomatoes and zucchini right now. I'm going to try that this week - gotta get some peppers and eggplant. Thanks!

I was fiddling around last night, trying to figure out how to get in more vegetables. I decided to stir fry some broccoli with a little sesame oil, soy sauce, and garlic. I had some leftover shrimp, and threw that in. YUM! It was wonderful! I also spent some time reviewing some of Gallop's recipes in the companion book - they sound really good and don't have a zillion ingredients. I'll report what I experiment on.

This morning, I had one of my old favorites - an Atkins frozen quiche. It was kind of a bittersweet moment, after the media bombarded us with the chapter 11 news yesterday. I still think there was nothing wrong with Atkins - my problem was that I could never get out of that "Induction" mindset. I think all I've really done by switching to the GI Diet is to get past that mindset and move on towards OWL. If the weight loss is slower, so what! I didn't exactly gain it overnight! Anyway, my musings for the day....
