Jasmin,

WoW!! This sure sounds great! Since my lovely cycle is always on the go (have had my period for about 5 months now) .. talk about a drag.. I have a lot of chocolate cravings. I also just started my Low carbing today so I know that I will NOT be eating this for a while, but I printed this out already so when I am able to eat it you bet I will be dying to make this!!

Laurie, Im replying here since you dont have a journal, but using 3 teaspoons for a tablespoon is about the same as changing 4 quarters for a dollar (3 ts = 15 mL = 1T). Just to let you know!!

Yeah, sorry I goofed on the measurements for the coffee, that would be way too strong! (BTW Bee, I think she meant 3Tsp (ie 1TB) instead of 3TB.) I just add things to taste and then estimate what I put in. Guess my brain was a little clouded, sorry, I'll edit the recipe.

I think you could easily skip it. I have some and, IMHO, it doesn't taste like chocolate at all! I think I found mine at Williams and Sonoma or some hoity toity cooking store.

When I made the pie I ended up putting the instant coffee in the ricotta part because I had made the cheesecake the night before and didn't have the instant coffee on hand! So it made a nice mocha chocolate mousse topping.

Yeah, I got the chocolate extract at a foo-foo cooking store 'cause the ricotta recipe (borrowed from another recipe) called for it. Big waste of money IMHO.
