Default Mock Applesauce (Your Family Will Be Fooled!)

I tried making mashed chayote the way I make mashed cauliflower, but it was way too watery and sweet. So I decided to try it as mock applesauce instead. The result was amazing!

2 chayote squash (click here for a picture/description)
1 Tbsp butter
2-3 packets Splenda
1/2 tsp cinnamon or to taste

Cut the squash in half, remove the pit, and peel. Dice and place in a sauce pan. Turn heat to medium, then cover. They are pretty watery and will basically steam themselves. They should steam for 15 minutes or so. Once soft, remove from heat, add butter, and puree'. Allow to cool breifly, add Splenda and cinnamon.

It's amazing!

Makes two servings.

Per serving:
96 calories
6 g fat
11g carbs - 4 g fiber = 7 g
2 g protein

and... 12% of your RDA for B6, 21% vit C, 47% folate, 19% zinc, and 260 mg potassium.

Not sure where you're located....I get it at Safeway, Nob Hill and all mexican grocery stores.

Chayote/christophene is also really good baked with cheese. Bake about the same length of time as for zucchini.

Thank you for the 'apple'sauce recipe ~ I'll have to see if I can locate some chayote.

LadyBelle ~ Can you please post back how you cook/bake your jicama to sub as applesauce? I've tried cooking jicama every which way there is, including crockpot and pressure cooker and I can never get it soft. Thanks! *Ü*

Oh my gawd---Moesie, I'm reading your response to where to find this squash and you recommended the Safeway on Nob Hill and I look out my window at work to the SAFEWAY ON NOB HILL !!!! And I'm in Yakima Washington. We must be living in a parallel universe. dodododod(scary music)

Had never even heard of Chayote. Thought it must have been one of those strange things we can never find here in Australia. So I clicked the link, I have a vine growing over my fence - we call them chokoes. When they start fruiting I must try this out.

I tried making this once, by putting the cubed jicama in a big pot of water and boiling it on the stove. When most of the water was evaporated, I filled it up and started over -- and then fill it up again when that is gone. The jicama wasn't mooshy soft like cooked apples -- but it broke down in my food processor to something resembling applesauce.

Oops! I forgot to peel mine...ate the peel. Is this okay? (A bit too late now - it was delish though!) Is there anything dangerous in the peel I should no about? Thanks for posting this recipie, Kristine!!

HAHAHA! This is classic! People actually TRYING to find chokos! They are so common here in Australia that they are almost a joke food, so easy to grow and so little taste There were always rumours that McDonalds in Australia pads out their apple pies with choko because they're cheaper than apples And a few years ago I found out my mother used to secretly pad out home-made spaghetti bolognase with chokos because they were cheaper than carrots.

When you're talking about someone who is hopeless at something, a common expression over here is "he couldn't grow a choko vine on a back fence"

Thanks for the recipe Kristine, I'll definitely give it a try!

EDIT: Nope, nothing bad in the peel at all. No need to peel them if you like them with the peel on.

How much is in a packet of Splenda? I have the bulk pack.

yes have heard them referred to as choko pies

My cousin was telling me once that she looked after all the flowers in the garden while her husband looked after the vegies - a choko vine LOL

I'm sure the skin is ok, have seen them served up on salad trays, sliced raw with skin still on them.

It would probably be equivalent to a teaspoon or two of granular splenda, but you can sweeten it to taste.
