It's very weird. When I make it with cream cheese in it I get a stomach ache without fail. But if I leave that out and use sour cream Im fine.. Odd. I somtimes throw in a handful of shredded cheese and bacon peices too.

Yum... I make mock mashed quite often but have never tried this version. I'm going to try it for dinner. I'm tempted to try it now but I don't have everything I need.

I made this earlier and it was really good. I can't tell the difference between these and reg garlic mashed potatoes. Have I been cheat free too long? I'm going to serve them to my kids for dinner w/ pot roast. That will be the true test, I'm dying to see if they will know it's not potatoes.

These are GREAT! Just made them for DH and myself with LC meatloaf and gravy, and it was the best comfort food ever. Didn't have parmesan cheese, just a four-cheese mix, but it still was awesome. They tasted a little like cauliflower at first...but with the gravy (3 carbs per 1/4 cup...I only had a couple of tablespoons) they were indistinguishable from real mashed potatoes. I will say, however, that the recipe, which is supposed to serve 3 or 4, really only had 2 good sized servings (well, my normal sized serving and my DH's giant portion!) He's not low carbing, but refused the "real" mashed potatoes I had gotten for him.....loved the mock ones.

This recipe is truly a keeper. By the way, I steamed the cauliflower in the microwave, using directions from a different LC faux potato recipe. Cut the cauliflower in small pieces, put it in a covered dish with 1 Tablespoon water, and heat on high for 5 minutes. Stir, and heat another 5 minutes; let stand covered for an additional 5 minutes.

I used the food processor and just zapped it all together....delicious.

try as i might, i just can't bring myself to try making anything with cauliflower! i hate even the smell of it cooking! but tonight i'm gonna try those instant mashers, they have only 4 net g. per serving if i remember correctly.

I still go there to look at his recipes.

It's such a shame he's no longer on the air.

He is such a great man and "regular guy."

We talked all the time via e-mail and he's so dern precious and sweet!

We lost touch when I became ill and then our old computer crashed and I lost all e-mail addy's plus tons more stuff!

Before the FNTV Message Boards were taken down, he'd always come in the forum and chat with us all..

Such a great guy!

You can find so many great recipes there by him.

You can still get his cookbooks of course as well!

I make this often. My basic recipe is more or less as others posted here but I use different seasonings each time. Also I always press all of the water out of the cauliflower before I process it and use some butter chuncks as well as cream cheese.

I usually add in at leat one of the below:

Basil pesto
articoke hearts (jarred pickled)
Feta cheese
Very fine grated hard cheese
cooked soft parsnip

Agree with Norma June: I get better results with a manual potato masher. The food processor produces a puree. This is still tasty, but I know Im going to be turning the leftovers into "vichyssoise" and maybe biscuits with Carbquik.
