These were easy and quite good. I used liquid splenda to bring the carb count down, and almond meal. Not too sweet and a little crumbly. Next time I'll add a few more drops of sweetzfree!

If i did it right, it's about 4 carbs per cookie.
I know this is an old thread...but I made this recipe before and I find the baked-in Splenda always makes it a bit bitter...so I made it WITHOUT any Splenda baked in at all...then, as the cookies were cooling, I dropped them into a bowl of Splenda and coated them on the OUTSIDE...sweetness without the bitterness. Score!
