I tried this the other night and it worked wonderfully!

Here's what I did:

I used a small non-stick skillet heated on medium heat until hot.

Weighed four ounces of cheese, a mixture of cheddar and shreaded parmesean.

Sprinkled half of the mixture into the pan until it covered evenly.

Let it cook for a few minutes, I had to ease the pancake tuner under the edges because it stuck a little, but when it seemed like it was melted together I flipped it.

After the other side cooked I put it on a paper towel to absorb a little of the extra greese. The just draped it over the handle of my pancake turner until it held it's shape.

Did the same thing with the other two ounces of cheese and I had two "taco shells".

They worked really well and I felt like I was eating what the rest of my family was, lol. of course the kids laughed at me

I love cheese and these were even cheesy enough that I didn't add any more on top...which was good since I was at my limit for the day.

I made this for lunch and used my cast iron griddle. I put a little oil on my pan so it wouldn't stick, it came out perfectly, but I could use another one. I can't wait to make this again. Do you know if you can make these shells and if you can save them for later.

Have you tried Diet Big Red yet? I almost did a Happy Dance in the grocery when I saw that it was sweetened with Splenda. Add cream and oo-la-la!

Oh....my....gosh....tacos? I can have TACOS??? Nachos?? Ooooh----I'm in heaven. Can't wait to try these--dinner for tonight is already in the slow cooker, but this will be good for dinner tomorrow!! The kids will LOVE these!!

this was the 1st LC recipe i tried tonight- just finished eating one matter-of-fact. YUM! i cooked mine a lil long (guess im blessed with a good micro ) and was afraid i had burnt it and that it was gonna be gross, but it was soooo satisfying. i only had 1 small one that i made on a saucer- added a big ol lettuce leaf, bout 1/4 cup of chicken, couple of tablespoons of salsa and mmmm even my anti LC other half who was making fun of me the whole time i was making it, was watching me eat it i bet he'll be secretly having one for breakfast while im out in the morning. hehe. great recipe! thanks for sharing

i made these tonight for dinner and they were good!!! thanks for the technique. I did it a little different though, I fried the cheese on low heat in a non-stick pan and the flipped, it was easy!
