I have made the pancakes every morning for breakfast for the last week!
I generally use the recipe the way it was first posted but I use Stevia. I make sure to use a generous amount of butter in the pan and then I top with whipped cream from the pttttttttttt can.
I have also been playing with the recipe a bit. The original is fantastic, but I generally make it a heaping tablespoon of flax, or flax and almond meal.
I was craving berry syrup so I used about a half Gel pack of Mona Vie Pulse then used the whipped cream. I have to try this with the waffles as posted above! It made a fantastic pancake! A Lot like I remember the Buckwheat pancakes I used to crave before the WOE. (I actually ate 2 of these and was full well past lunch!)
One time I added a chopped up, mini Hershey's Sugar Free Dark Chocolate to the batter...topped with the whipped cream. Chocolate chip pancakes baby!
This morning I omitted the cinnamon and the Stevia and made a plain pancake with just the egg, the flax and the baking powder. It was a little eggy tasting, but since I had bacon and an over easy egg, I buried the egg under the cake and smacked the top to break the yolk into the pancake! Heaven!!
I wonder if some almond flour will remedy the eggy flavor and make this taste more like a traditional pancake? I will try the pinch of salt too. The way I ate it today it was fine, but as a bread substitute I am not sure. Also, I don't know that I would want the sweet and cinnamon version for a bread sub either.
Either way this is a fantastic recipe and I will now start playing with it to make a more savory cake. That may be fantastic for sammiches with ham and cheese...or some Italian specialty meats and cheeses. I am thinking along the lines of the Italian Cheese and Herb sub rolls at Subway etc... gotta play with this some more.
The beauty is if you had one fro breakfast and then had two with your lunch in a sandwich, you are only adding >6 carbs to your day!
OOOH! Can you imagine a savory version stuffed with egg salad? YUM!
