YUM!! I was craving for a sweet breakfast this morning so logged on to look for a recipe. I altered the recipe a bit and made it for two ppl.

1 TBS Flax meal
1 TBS Almond meal
2 egg
1 tsp baking powder
1 tsp cinnamon

These bubbled at the surface like 'real' pancakes, and were to die for! My new fave, thanks so much.

PS - topped with a couple of strawberries and melted square of Cote d'Or 86% chocolate.... mmmmmmm

That looks good, Prof. Gumby. I think I will try your version, too, Lil Ozzi. Almond meal would bring a nice sweetness to it.

Sure, grind them up in a food processor or coffee mill.

I keep meaning to post - I make this several times a week. I only use the flax, eggs, baking powder and add parmesan cheese. I double the recipe, pour it onto the griddle and make a big pancake. This I cut in half and make sandwiches. Thanks for the recipe!!

Just made these for the first time and I love them. I lost weight last year on Atkins but gained it back. I think I just got tired of meat and eggs. This time I have decided to go through the recipes and actually do some cooking and eat meals. This was the first recipe I tried and I love it.

This is THE best ever!

I made thick waffles with it, with slight variation:

8 eggs

1/2 cup plus 1/8 cup ground flaxseed meal

4 tsp. baking powder

4 tsp. cinnamon

2 tsp. vanilla extract

4 packets Spenda


SWEET!!!!! They rose like champs.....

Mmmmmm! Waffles!

I have made the pancakes every morning for breakfast for the last week!


I generally use the recipe the way it was first posted but I use Stevia. I make sure to use a generous amount of butter in the pan and then I top with whipped cream from the pttttttttttt can.

I have also been playing with the recipe a bit. The original is fantastic, but I generally make it a heaping tablespoon of flax, or flax and almond meal.

I was craving berry syrup so I used about a half Gel pack of Mona Vie Pulse then used the whipped cream. I have to try this with the waffles as posted above! It made a fantastic pancake! A Lot like I remember the Buckwheat pancakes I used to crave before the WOE. (I actually ate 2 of these and was full well past lunch!)

One time I added a chopped up, mini Hershey's Sugar Free Dark Chocolate to the batter...topped with the whipped cream. Chocolate chip pancakes baby!

This morning I omitted the cinnamon and the Stevia and made a plain pancake with just the egg, the flax and the baking powder. It was a little eggy tasting, but since I had bacon and an over easy egg, I buried the egg under the cake and smacked the top to break the yolk into the pancake! Heaven!!

I wonder if some almond flour will remedy the eggy flavor and make this taste more like a traditional pancake? I will try the pinch of salt too. The way I ate it today it was fine, but as a bread substitute I am not sure. Also, I don't know that I would want the sweet and cinnamon version for a bread sub either.

Either way this is a fantastic recipe and I will now start playing with it to make a more savory cake. That may be fantastic for sammiches with ham and cheese...or some Italian specialty meats and cheeses. I am thinking along the lines of the Italian Cheese and Herb sub rolls at Subway etc... gotta play with this some more.

The beauty is if you had one fro breakfast and then had two with your lunch in a sandwich, you are only adding >6 carbs to your day!

OOOH! Can you imagine a savory version stuffed with egg salad? YUM!

Just a quick add to the line...I tried the pancake with a heaping half teaspoon of baking powder and it rises even more! Still tastes sinfully good too!

Also I topped mine on Saturday with a teaspoon of apricot preserves made locally. The place that makes them uses only fruit and pectin to make these oh, so good preserves. Very much LC. I also used some DaVinci SF Vanialla syrup instead of stevia, and let me tell you the vanilla addition to the pancake with the apricot with the cinnamon in the pancake was heavenly!

Drat! Now I'm hungry again!

OMG!!!!! This is fantastic. I don't eat pancakes often but sometimes on the weekend I would miss them. I used the version posted above that used the almond flour and 2 eggs and made myself 2 pancakes. I also used Walden Farm's Calorie Free, Sugar Free, Carb Free Pancake Syrup. Tastes just like real pancakes!!

We eat this version all the time -- add some chopped pecans and a few blueberries -- heaven! Oh, and fry in coconut oil -- extra yummy.

Decided I would make my dh the pancakes he loves so much -- they're made from scratch but w/regular flour. I saw this recipe on here last week and thought wth!?!?! may as well try one of these while dh is eating his homemade pancakes!! I must have picked the recipe up from another post because the one I used didn't have the almond meal in it but everything else. While I was eating it, which by the way was DELISH!!!! , I was thinking I could have added in some of my almond meal...def next time!!
These were WONDERFUL !!! I sliced up some fresh blackberries and added to the mixture. Wasn't sure by the looks of it if it was gonna turn out ok or not but it sure was tasty!! I think next time I'll add some whipped cream on top!
