I just had this for lunch and it was super super good and easy. I think next time I will cut my tofu down in really small chunks though. I did tweak mine a bit. I only did one egg instead of two and I added both onion and garlic powders and sprinkeled some parm cheese on the top so it could get a little toasty. I LOVED it! Thanks!

I adapted mine according to all the suggestions, and I'm addicted! I use extra firm tofu and I do cut the tofu into small narrow strips - about the shape of an elbow macaroni if it were straight and solid. I use one egg, about a 1/4 cup of heavy cream, 2 cups cheese, and lots of pepper & lowry's garlic salt. Dump it all in a bowl, bake it and VOY-OLA!

oh yeah... a tablespoon or so of cooking oil does prevent it from being too dry.

It's wonderful and tastes every bit like the homemade baked mac & cheese that my mom used to make! I love it so much I haven't even put anything else in there...

I tried this tonight. I cut the tofu in small rectangular dices, added 2 cups cheese, 1 egg and 1/4 cup of cream. I then sprinkled it with parm. cheese. It smelled great and the topping was great but the tofu was to soy tasting for us Is there a difference in brands or anything? or will all tofu taste like soy?

The only worry with induction would be the large amount of cheese. If you broke it into something like 6-8 servings and had it as a side dish to stay within the cheese limit for the day, it could work. Be warned though it is very hard to make this and not eat the entire thing, it is so darn good.

What I like to do is cook it for 30 mins. Then I sprinkle more cheese on top and polace it under the broiler. That way I get that brown crisp kind of crust I remember form my grandmother's homade mac and cheese.

Tonight I'm trying a variation by mixing in cooked, drained spinach. I've heard ham and meats are also good mix ins.

Delicious! Even better the next day.

I used one cup cheddar cheese...1 cup edam...2 tbps. butter and 1 tbps.oil. added 1 1/2 tbps of sour cream in addition to the 1/4 cup cream..Garlic and onion powder..a little salt and pepper. One egg...cut up the tofu (18oz pack) like macaroni...and topped the whole thing with some parmesan cheese. Yum Yum!

Thanks for sharing!

Will also try with either..ham, tuna or chicken.

I tried this and it was really good! I cut the tofu into small strips, and took out the eggs, added cream, butter, 1 Tbsp of oil, and parmesean cheese. Tasty

Made this for dinner tonite... I doubled the recipe, because I have a hungry hubby.. and he enjoyed it. I used 3 eggs, rather than 4.. and really for the taste I was seeking, I should have just elminated the eggs entirely... cause it was more of quiche.. which I like, but wasnt what I was seeking. so.. next time, no eggs for me for this recipe. Very good tho.

I've made this before as an experiment no recipe. The drier your tofu the better. I use chunks and some mashed tofu.Roll the chunks in parmesan and herbs/garlic spices.

A tuna and mushroom casserole sounds good too-will have to try that variation.

I LOVE TOFU...always have. that sounds soooooo good.

Tried this recipe last night and what a success!!!! It was really so delicious I wanted to bump the recipe for all the newbies!

I cut up the tofu in small macaroni like pieces and stir fried them in a pan with some butter. I followed the rest of the recipe as is. Even my BF, who hates tofu liked this one! The whole place smelled wonderful!

THis one is definitely a keeper! Thank you!

Glad people are enjoying this recipe. I had leftover Carb Options cheese sauce, so I tried pouring 1 cup cheese sauce over 1# chopped tofu. I added 1oz Havarti cheese to the top when it was almost done. It was very good - a real hit with dh - and very easy. Dh said it was a good change of pace.

Thanks for the recipe...I've never tried tofu, but this sounds like a great recipe to try it for the first time!
