Default White Chocolate Macademia Cookies (Carbquik)

White Chocolate Macademia Cookies

1/2 cup butter UNSALTED, softened
1 cup brown sugar twin, packed
1/4 cup Splenda
1 egg
2 cups Bisquick baking mix
1/2 cup chopped macademia nuts
1 LC white chocolate bar (I like Ross), broken into small chunks


Preheat oven to 375 F.
In a large bowl, combine butter, sugar and egg until smooth.
Add Carbquik, nuts, and chocolate.
Drop small spoonfuls of batter on an ungreased cookie sheet.
Bake for 10 or less, and watch carefully. Remove when lightly brown.

Enjoy with a cool glass of Hood's milk
Freeze extras to avoid temptation...

I j ust wanted to know if this was american brown sugar twin? I have heard that it is so nasty that I have been avoiding making anyghing with it,, I really would like to try these cookies though, maybe I will try the molasses trick instead, thanks for posting the recipe

Yes, I did use American Brown Sugar twin, but the cookies didn't have any weird after taste at all. The only tweaking I would do is perhaps sub parts of the Carbquick for other types of flour to make the cookies a little less salty. Yesterday I tried the following variation:

1 cup Carbquik
1/2 cup Minicarb "0" carb bake mix
1/2 cup almond flour
small pinch baking powder
1 cup brown sugar twin packed
5 packets Splenda
splash vanilla davinci syrup
1/3 cup egg substitute (egg beaters)
1 Ross white chocolate bar broken up
1 Ross milk chocolate bar broken up
1/4 cup chopped macademia nuts

They turned out much better! The first batch was still awesome, but these had more of a cookie-like texture and less of that of a sweet biscuit. These were delicious!

Ooops, I left out the butter in the second recipe! I still used 1/2 cup of UNSALTED butter!

thanks, I am going to try this today,, I want to freeze some for Christmas, I was very leary up putting the brown sugar twin as I heard so many negative things about it,, I was going to use the splenda molasses mix,, I still might, I will let you know how they turn out,

I totally agree with you Coco about the saltiness of CarbQuik, I notice it much more in certain recipes..

If you use brown sugar twin, these should come out to less then 2 carbs per cookie, depending on how many you make and what brand of chocolate you use. If you substitute the brown sugar twin for molasses, the count would be a little higher. I would however recommend this substitute because I tried it today with much better results. I've found that when doing low carb baking, practice and tweaking is essential to find that perfect recipe!

Oh I forgot to ask, we don't have carbquick in canada ( I havn't seen it) what would I substitute that with?
