i like yolks to be a bit runny, so i steam for 9min:30sec then run under cold water (makes peeling super easy and they don't continue "cooking" inside shell). if you like more solid yolks, then you would want to add maybe 2-3 minutes to steam time.

I thought maybe it was like the Japanese dish called Shawan Mushi.( not spelled correctly where they put the egg in a cup with broth and a cover and then cook it in a water bath. There are pieces of fish, spinach and crab in the egg mixture.
A REAL Japanese restaurant will have it.
It is the bomb...lol

ooh- that sounds SO good- one thing DC has in spades is really authentic cuisine (very large immigrant melting pot here). i will now have to try and hunt this down

headed to a party at a mexican place tonight:

ceviche
and either the tortilla soup sans the tortilla chips (it is a great low carb chicken soup, once the chips aren't on it) or the avocado and tomato side salad......touch decision on this one......
