25g melted butter

Does this mean 100 grams of ground almonds?

and 25 grams of melted butter?

What are these equal to, ounce wise?

I have tried the lemon curd twice but I don't like the taste of the one I made. I do love lemon curd. The only thing I can figure out what is going wrong, is that I used Somersweet as the sweetner. The only artificial sweetner I can stand. It might work better just to use sugar but then it defeats the low carb idea.

28.34 grams in one ounce by dry weight (that is, 1/16th of a pound).

So a 'scant' 1 ounce of the butter, approx 1/16th of a 1-pound bar, and about 3.5 ounces of the almonds/ground.

Oooooohhhh ... This looks GOOD! Gonna make it sometime early next week.

I like the pudding/whipped topping idea for topping. I'll also be trying the lemon curd, just for kicks.

You can make almond flour by finely grinding almonds in a coffee grinder (that hasn't been used for coffee or strong spices) or in a food processor. Keep an eye on it so it doesn't turn into almond butter. However, I buy Bob's Red Mill Almond Flour at a health food store as it is easier and is more consistent product. They also have it available on Bob's Red Mill website. Hope this helped.

I LOVE this cake. I don't make it too often, as it's just that good. I'd be having it all the time. But I add a little bit of banana extract to it, use liquid splenda instead of packets and then put a 1/4 cup of breyers low carb vanilla ice cream on top while the cake is still hot. Makes an AWESOME twice-a-month dessert.

Azure, where did you get the liquid Splenda??? (Or are you talking about DaVinci syrups?)

this just seems too good to be true! i was looking for a birthday treat for myself and stumbled upon this--what luck!!! i think i'll stir in a little cocoa and have a choc. cake, since that is what i usually have on my birthday.

I saw this cake recipe and decided to make it.


I grind my almonds in my coffee grinder; I didn't feel like cleaning it out so I just ground up the almonds with the leftover coffee grounds.

IT CAME OUT WONDERFUL! It was coffee flavored cake. I made a coffee curd for a topping and it was Delicious!

I then tried the lemon version of the cake; I have to say the coffee is much better. The coffee taste masks any off flavors from the sweetener, plus it masks any almond or egg overtones. Giving it a perfect texture and mouth feel, plus a great smell!

Also I used only half of the butter the cake called for, and it turned out denser and more brownie like. Why? I have no idea, but I like denser.



Give it a shot and tell me what you think. I used about 2 Tbls ground coffee for the cake, and 2Tbls for the curd (I just substituted the coffee for the lemon).

Wow Rob! This recipe seems to have earned you "hero-status"! I've read all the posts and can hardly wait to go give it a try! Looks like so many possibilities too, with the variations. The lemon curd though - it really caught my eye. Always loved lemon-meringue pies - this should be a bite of heaven! Thanks for your efforts!

Just had to say thanks! I made the basic recipe using vanilla, Miracle Sweet (Xylitol - we love that!) and did not use the lemon curd. It was AWESOME We actually had them with some blackberries. Two each was 3 net carbs since I made 8 from the recipe. Next week we are going to add lemon peel and poppy seeds which will add ~.4 to each one, but still a pretty low treat.

Now I have to back and read all of the other variations.
