Also.. i've made the ziplock icecream years ago with real sugar.. and love it.. i'm sure it would taste as good with splenda

Default Veggie chicken soup

I am glad you guys like the recipes posted here.. its been trial and error.. .along the way..and as you can see..I have not really been posting alot of recipes here lately.. due to my office moving and getting set up there... so... cooking has been pretty much basic or not at all!!!

My fav quickie is soups...

Latest concoction:

Veggie Chicken soup

Cabbage, can of diced tomatoes, 1 small onion, 2 chicken breasts, some baby carrots, celery, mushrooms, chunked zuchinni, seasonings... YUM. You can make it a creamy soup by adding cream of chick or mushroom..no time to figure the carbs, etc.. but its all good veggies.. so these are all good carbs

Default American Bean Bag Salad

6 cups fresh green beans- rinsed with stems trimmed - (blanched in hot water 4 minutes)
2 cups grape tomatoes
6 cloves garlic - each sliced into 3 pieces
8 oz. cheddar cheese - cubed in 3/4 inch squares
1 cup walnuts - roasted in pan with tablespoon butter and salt
3 oz. olive oil
salt and pepper to taste

Bean Bag Salad Preparation:
Place two 18" x 18" pieces of heavy duty foil on top of each other. Put blanched beans in center of foil. Add all other ingredients on top of beans and season with salt and pepper. Fold top and bottom edges of foil over beans. Fold left and right edges over top and bottom edges to make foil bag with seams up. Grill, seam side up, over open charcoals or gas grill on medium high heat for about 15 minutes. Cheese should be soft and garlic should be fragrant.

Yields 6 servings - approximately 8 net carbs per serving

Default Dawn's Simple Pork Chops w/Sauerkraut under 3.5 net carbs

Ingredients
6 oz Pork loin chop
Sauerkraut
Green Onion
Apple

Drizzle a little olive oil and saute onions, add sauerkraut. Finely Chop a small apple, Then place your pork chops on top, cover and simmer 25 -35 minutes, making sure the pork is cooked all the way thru. Add your seasonings as desired. If you dont want the apple, that is fine as well. This is a YUMMY Dish!


Fiber= 3.64
Carbs=7
Net Carbs=3.35

Default Italian veggie and chicken

Been awhile but here I go again:

Italian Squash

1 small yellow squash
1 small green zuchinni
Olive oil
4 oz Purdue short cuts Italian chicken strips, (or you can make your own homemade)
3 oz parmesan cheese (the real, hard grated, not sprinkle stuff)
Salt and pepper to taste. Garlic and oregano
If you wish: diced tomatoes, mushrooms, peppers, onions.

Wash and grate the squash and zuchinni leaving the skin on. Melt butter in skillet, and add cut-up squash when butter is melted. Sauté squash for 3-4 min until tender. Add chicken, and heat thru, an additional 1-2 min. Serve immediately, with the parmesan on top.

Now, I think that if you would like to make this into a casserole, that would be good, and I am going to try that, and post how that goes.. maybe adding some flax or egg to give it substance.

Enjoy. Filling. I am not going to calculate the ECC or whatnot.. these are all healthy veggies, and frankly I am tired of counting every carb... you know what veggies are good for you, and these are the good ones.. so basically they are 'free'
