Question looking for Atkins approved soup recipes that can serve in restaurant

I am new to this site and actually found it when looking for soup recipes to serve in our restaurant that fit in with the Atkins plans. Please pass them on if you have any that are relatively easy to prepare and taste wonderful. I have been watching carbs now for about 3 months and feel good about the weight that I've lost. I'm also about to begin helping our 13 yr old son learn to make better food choices. He is ADHD and eats way too many carbs which I am realizing affects his hyperactiveness. I need some suggestions for his lunch since he takes it to school every day.

The Atkins website (www.atkins.com) has some tasty soup recipes, complete with the net carb content and all nutritional info. I'm looking forward to trying the Seafood Chowder recipe I recently copied off of there.

There are also some great soup recipes on the board in the recipe forum. Carb counts are usually given but if not, you can put them through Fitday and it will calculate the counts for you.

Cream of brocolli soup is the favorite at our house. Boil brocolli in broth (chicken or beef) until soft. Process in a blender. Add cream. Very easy and very good.
My son is also ADHD. He has done so much better by eliminating carbs.

I make this for my family all the time and they love it..sorry i don't have the carb count but i am sure it wouldn't be too hard to figure out at fitday....

Maggies Hamburger Soup

3 cups water approx in large pot
I usually start with beef stock from a roast I have cooked but if not I will use a carton of the campbells low salt beef broth, or a few cubes oxo....
can of crushed tomatoes (watch carb count here get lowest you can find with no sugar)
2 or 3 lbs very lean ground beef
1/2 cup chopped green onions
1/2 cup of chopped green peppers
2 cup chopped broccoli.. I have also used frozen in a pinch
2 cup chopped cauliflower.. also can use frozen
1/2 tsp thyme
1/2 tsp oregono
1/2 tsp sage
1/2 tsp pepper
1/2 tsp rosemary
1/2 tsp garlic in oil (jarred stuff)
few shakes of worcestershire sauce

All above are approx as I go by taste…….

While all other ingredients except meat are at a rolling boil, drop crumbled raw meat into pot slowly, and boil for five minutes, then simmer for one hour.
Before serving, if there is grease on top, I cover entire surface with ice cubes, wait a few minutes for grease to gather around cubes, and then scoop out the grease....

Enjoy!
