With regard to maintenance, I think the road to success there is at least in part down to the individual. Some people may find that their underlying insulin resistance improves after a while and they can slowly reintroduce a few more carbs without issue.
I'm not one of those people. I know, I've tried the last 3 summers with different foods and have regained a little weight again each time. So I pretty much stick to what I was eating when I was still actively losing weight. Whether or not I actually want to eat carbs is pretty much irrelevant to me at this point, as I now understand exactly what will happen to me if I do. So I just tell myself (and others should they ask) that I just can't, because that's basically what I need to avoid if I'm to remain at a healthy weight, and just healthy in general.
YMMV of course, but you won't know either way until you experiment for yourself. Take your time with it though, we've all got the rest of our lives to figure this thing out.
