Default Egg and Cheese puffs

I really wasn't sure whether to post this in breakfast or main course since it can be used as both. My mom made these when we were growing up. I really missed them and suddenly thought about using almond flour. My sister who makes them all the time says they taste exactly the same as the ones with flour.

4 eggs
~ 5 oz grated cheese (1/3 lb)
1/3 cup finely diced onion
1/3 cup almond flour
1 tsp baking powder
salt and pepper to taste.

Beat eggs until light. Mix in grated cheese and diced onion. Mix together almond flour and baking powder and add all at once to egg mixture. Stir until well blended. Make like a pancake using about 1/4 c batter. Fry in a skillet coated with oil.

I miss the homemade bread and butter pickles we ate with this whether for breakfast or supper, but it was just nice to have a favourite.

We always remember this recipe because it is in thirds. 1/3 of a dozen, 1/3 if a pound, 1/3 of a cup and 1/3 of a Tablespoon!

You can make sf bread and butter pickles in your microwave. Recipe here.
