Talking Cheesy Tortilla's

This recipe is great I usually take a slice of ham or turkey (whatever lunchmeat you like) and roll it up in one of these tortilla's.

1 egg
1 tbs heavy whipping cream
2 tbs finely crushed pork rinds
1 1/2 c shredded cheddar
season salt or Mrs Dash to taste

mix all ingredients together let sit a few minutes until thicked (3-4 min). Drop by spoonfuls into heated skillet. Spread mixture out thin and brown on both sides. No need to grease pan. This is yummy and is only about 6 carbs for the entire recipe.

...if you've used spicy pork rinds! I bet that would make great, spicy tortillas that would add a kick to any lunch-time treat!

We don't eat pork. Do you have any suggestions about what substitute I can use in place of the pork rinds?

I was looking for some snacks and felt very limited by pork rinds. You're a blessing! These sound yummy! If I may ask, what did you fry them in? Oil? Butter? Thanks again!

Wow, this sounds great!

I eat fish tacos quite often.

I actually take Salmon patties and saute them in a skillet like ground beef. Next week I will try this instead of the low-carb tortilla (with the spicy rinds). I will let you know how it comes out.
