Default baked avocado with cheese

I know it's an acquired taste for some, but I really LOVE warm baked avocados! Been making them for breakfast with cheese, I like them best with cheese just warm and melted and not too toasty.

So far tried with mozzarella and cheddar, but just got an idea to bake the avocado halves with a little brie in the center and let it melt. I also saw recipes online for avocados baked with bacon and cheese.

Thanks for posting this. I love avocados, never had them baked. Ohhh w/ Brie, yum.

My favorite mex restaurant in Calif has a dish that is avocado halves stuffed with the hamburger they use in the tacos ( I think hamburger, onion and tomato sauce and seasoning) topped with shredded cheese and heated to melt the cheese..... now that you reminded me I am going to try this at home since I don't live there anymore they were yummy

I don't have a recipe but I would make ground beef as you would for tacos. Slice the avocado in half and fill each with the gr beef then top with cheese mexican or chedder and bake til cheese melts.. Could be topped with salsa and sour cream. I make taco meat by browning 1 lb beef and onion.... then 1/2 of small can tomato sauce and taco seasonings and simmer 15 min or so

I made this tonite it was excellant

1 and 1/2 lb ground beef
1/3 package taco seasoning
1 small can tomato sauce
mexican cheese
avocado

Brown the beef and add seasoning plus tomato sauce. I simmer it til it is not soupy. I used about a third of the meat and divided the rest in half and froze it for another time.
cut avocado in half remove pit and peel off the skin..place on baking pan I used a pie tin spoon the meat onto the avocado and top with cheese. Bake about 15 min til cheese is bubbly. I figured it was about 8 net grams
